The variety of cheese we made was very impressive. Excellent workbook, it was needed with all that information.  You gave clear basic instructions during the practical. The food provided was delicious and the group was lots of fun. I am now looking forward to going home to make these cheeses and the next home course. I strongly recommend the pre-reading that Graham provides so you get to the course with some cheesemaking understanding
